
Low Carb-Mint Chocolate Cookies
These cookies are inspired by the classic Thin Mint Girl Scout treat but with a healthier twist- low in carbs, no added sugar, and packed with rich chocolate flavor. "Mint" to be enjoyed without the guilt!
Ingredients
- 2/3 cup natural almond butter
- 2/3 cup unsweetened almond milk
- 1 tsp peppermint extract
- 2/3 cup Pure & Delicious Dutch Chocolate protein powder
- 2/3 cup coconut flour
- 1/4 cup monk fruit sweetener
- 1 cup Lily's sugar free chocolate chips
- 1/2 tsp salt
- 2 TBSP unsweetened cocoa powder
Instructions
- Combine all ingredients in a bowl except the chocolate chips.
- Stir until just combined.
- Form the dough into 1-inch balls and place them on a lined baking sheet. Gently press them down with the back of a spoon to flatten them out.
- Bake at 350 for 8 minutes.
- Once the cookies have cooled melt 1 cup of sugar free chocolate chips in the microwave.
- Dip cookie tops into the melted chocolate and place into the fridge or freezer to set.
