Mint Chocolate Protein Brownies

Mint chocolate protein brownies- flourless, fudgy, and topped with creamy mint cream cheese frosting- perfect for a sweet protein boost!
Servings 9

Ingredients
  

  • 3/4 cup canned pumpkin
  • 2 TBSP non-fat Greek yogurt
  • 1/2 cup natural almond butter
  • 1 egg
  • 1/4 cup unsweetened vanilla almond milk
  • 1/2 tsp vanilla extract
  • 1 tsp mint extract
  • 1/4 cup unsweetened cocoa powder
  • 3 1/2 TBSP monk fruit sweetener
  • 1/4 cup Pure & Delicious Dutch Chocolate protein powder
  • 1 tsp baking soda
  • pinch salt
  • 1/3 cup Ghirardelli 60% dark chocolate chips

Mint Frosting

  • 8 oz low-fat cream cheese
  • 3-4 TBSP powdered monk fruit sweetener
  • 1/4 tsp mint extract
  • optional 1-2 TBSP unsweetened almond milk to thin out the frosting to the desired consistency.

Instructions
 

  • Combine all ingredients in a bowl. Mix well.
  • Spray an 8×8 pan and pour batter into baking dish
  • Bake at 350 for 25-30 min.
  • While the brownies are cooling blend frosting ingredients with a hand-held mixer.
  • Frost brownies, cut into 9 squares, and enjoy!
