
Mint Chocolate Protein Brownies
Mint chocolate protein brownies- flourless, fudgy, and topped with creamy mint cream cheese frosting- perfect for a sweet protein boost!
Ingredients
- 3/4 cup canned pumpkin
- 2 TBSP non-fat Greek yogurt
- 1/2 cup natural almond butter
- 1 egg
- 1/4 cup unsweetened vanilla almond milk
- 1/2 tsp vanilla extract
- 1 tsp mint extract
- 1/4 cup unsweetened cocoa powder
- 3 1/2 TBSP monk fruit sweetener
- 1/4 cup Pure & Delicious Dutch Chocolate protein powder
- 1 tsp baking soda
- pinch salt
- 1/3 cup Ghirardelli 60% dark chocolate chips
Mint Frosting
- 8 oz low-fat cream cheese
- 3-4 TBSP powdered monk fruit sweetener
- 1/4 tsp mint extract
- optional 1-2 TBSP unsweetened almond milk to thin out the frosting to the desired consistency.
Instructions
- Combine all ingredients in a bowl. Mix well.
- Spray an 8×8 pan and pour batter into baking dish
- Bake at 350 for 25-30 min.
- While the brownies are cooling blend frosting ingredients with a hand-held mixer.
- Frost brownies, cut into 9 squares, and enjoy!
